Day to Day Life: Weeks 1 + 2

I wasn’t sure that I was going to keep this series going, but in retrospect, it’s sort of fun at the end of the year, to look back on these posts and see some of the daily things that happen throughout the year. With that in mind, here’s a glimpse at the first couple weeks of the new year:

Little kid(s) snack plate. (Except I’d eat the same snack plate.)

This cake experiment! Flourless, slightly boozy, plenty chocolatey.

A New Year’s feast, southern style. Black eyed peas, smoky collard greens, buttermilk cornbread… bourbon for good measure.
Forbidden Rice Blog | Day to Day Life Weeks One and Two (15 of 20)

I very much love greens… leftover collards for lunch the following day, topped with an over easy egg. And my favorite hot sauce.

First batch of homemade noodles with the pasta rollers I received for Christmas, for our KitchenAid.

Second batch of noodles a few days later was homemade spaghetti… with a simple homemade marinara and veggie meatballs. My husband said to me, “I hope these noodles come out good because last time you said they didn’t, and then you got drunk and went to bed!” HEHE! Real Life-Real talk.

Little winter treasures.

I’ve decided that I really like cheese enchiladas on flour tortillas… and not just because it means I don’t have to make corn tortillas! ;)

Pretty produce… pre-eggplant parmesan.

I’ve been making salads that I really enjoy eating lately! WOOHOO!

Buttermilk waffles one morning, with fresh strawberries.

Still some of my favorite sky-scapes this time of year!

Brunch for the hubby and I one afternoon. Chilaquiles! (SO GOOD!)
Forbidden Rice Blog | Day to Day Life Weeks One and Two (13 of 20)

My friend Janet and I finally got to squeeze in a Sammich lunch date. I got this, “Capone’s Paper Boy,” a special consisting of house roasted beef, salami, provolone, sprouts, Chicago mustard + mayo, plus added spicy giardiniera! I ate half… then got home and immediately at the remainder. My “leftovers” didn’t even make it to the fridge!

Nana got me a pizza stone for Christmas, which replaced our broken stone. We christened it with homemade pizzas last night.

Sometimes you just gotta buy yourself a papaya for lunch.

I hope your 2016 is off to a great start!

Day to Day Life: Weeks 42, 43, 44!

It appears our days are filled with so many shenanigans, I lose track of all time. I’ll think to myself “I should write a Monday post…” and then suddenly it’s Saturday and I’m exhausted. A quick browse-through of the last few weeks:

What is this? Our washing machine broke and this is the laundry that accumulated over the course of three days. Yes, three days.
Day to Day Life Weeks 42, 43, 44 (1 of 30)

Don’t fret! Although it took a couple weeks, these beauties arrived. They’re bigger than the last and will hopefully cut down on the number of laundry loads each week.
Day to Day Life Weeks 42, 43, 44 (21 of 30)

Adult dinner-ing at its finest.
Day to Day Life Weeks 42, 43, 44 (6 of 30)

One of my favorite walks home this time of year.
Day to Day Life Weeks 42, 43, 44 (5 of 30)

This guy and girl are getting older and requiring a little more assistance daily… They turned 11 in August.
Day to Day Life Weeks 42, 43, 44 (4 of 30)

We’ve hit fall, but have had some gorgeous weather recently. Tomatoes are still red and ripe.
Day to Day Life Weeks 42, 43, 44 (3 of 30)

There have been a number of trips out of town for water polo. This photo is after Vincent’s team totally dominated all weekend and won first place in the Salem Tournament.
Day to Day Life Weeks 42, 43, 44 (12 of 30)

This fella has been on a number of the polo trips with us…
Day to Day Life Weeks 42, 43, 44 (13 of 30)

Little Chicken having a bath!
Day to Day Life Weeks 42, 43, 44 (8 of 30)

Some lovely clouds somewhere along I-5 Northbound.
Day to Day Life Weeks 42, 43, 44 (9 of 30)

While running errands one morning, the hubby and I attempted to get burritos in 3 different places… When all those places were closed, we gave up… then rode by In-N-Out, which just opened their first location outside of California here. The line was almost nonexistent (which has been unheard of) so… neapolitan shake and animal style fries to share for breakfast.
Day to Day Life Weeks 42, 43, 44 (7 of 30)

So many road trips… the roads begin to all seem like this.
Day to Day Life Weeks 42, 43, 44 (10 of 30)

Somebody got braces…
12140643_10203812429151225_1192537705396371003_n

My hubby was part of a reading in Eugene. That week we drove home from Salem Sunday, drove up to Eugene Tuesday, drove to Ashland Wednesday, then drove up to Cottage Grove on Friday! It was pretty silly. But! The reading went well…
Day to Day Life Weeks 42, 43, 44 (14 of 30)

And we took it upon ourselves to find excellent New York style pizza in town…
Day to Day Life Weeks 42, 43, 44 (15 of 30)

And the clouds were impeccably moody!
Day to Day Life Weeks 42, 43, 44 (16 of 30)

Do you know what is going on in the photo? LOTS of sass and LOTS of not listening to Julie (i.e. “Don’t stand on Nana’s countertops…” “I can do whatever I want!” Geeze!)!
Day to Day Life Weeks 42, 43, 44 (2 of 30)

Homemade Yumm bowls one night.
Day to Day Life Weeks 42, 43, 44 (11 of 30)

Chicken has been to all the water polo tournaments. Because of his crazy legs, it’s hard for him to get comfortable sometimes… so he gets to ride shotgun in my lap.
Day to Day Life Weeks 42, 43, 44 (18 of 30)

Both the Ashland boys and girls water polo teams are first in their conference. That means they’ll go up on Thursday to play in the District tournament and hopefully play for first in state next weekend.
Day to Day Life Weeks 42, 43, 44 (19 of 30)

Fluffy, TALL biscuits and mushroom gravy for breakfast.
Day to Day Life Weeks 42, 43, 44 (17 of 30)

There are certain days that bourbon:thirty comes waaaay before 5 o’clock! ;)

Moody moon skies.

Boo!

Silas insisted Craig try on the costume he and his mom made for Halloween…
Day to Day Life Weeks 42, 43, 44 (26 of 30)

Meanwhile Vincent and his friends went as Scooby Doo and the gang. (Thelma met up with them later into the night.)
Day to Day Life Weeks 42, 43, 44 (29 of 30)

Day to Day Life Weeks 42, 43, 44 (30 of 30)

One of my favorite dinners in a while! Vegetable chow mein with crisp ginger soy tofu!
Day to Day Life Weeks 42, 43, 44 (24 of 30)

Hope you’ve all been enjoying the last few weeks!

Day to Day Life: Week Thirty-Two

A look at the last week:

Our garden is apparently quite happy… it’s dumping out a supply of veggies daily.
IMG_4693

Soyrizo fried rice for brunch one morning.
IMG_4665

One of my pet peeves: packing the wrong shoes to put on after working out + showering at the gym. Hellooo so many stripes…
IMG_4668

Went to listen to my husband read a short story he had published recently and perform a newly written song as part of a local literary event.
IMG_4835

We waited really patiently for this mango to ripen just right… so worth the wait.
IMG_4842

Zucchini “noodles” aren’t new, but I had never made them before. While the flavor of this “pasta” was impeccable, the consistency didn’t work for me. Things got soupy. I haven’t given up yet…
IMG_4702

Family scrabble night with Nana. Silas and I were a team (and whopped everyone, hah… P.S. I inherited competitiveness from all sides…). YOU tell me what “girltax” is other than a term that comes from your creative writing teacher husband. And ahem pardon the term slut that a certain 9-year-old was eager to play.
IMG_4836

This is how we hang out.
IMG_4841

Hi, bird! We let our crippled pigeon fly around the house throughout the day. She likes to fly into whatever room I am in… sometimes that is more hazardous than other times. Today she has landed on my head twice and needed a quick mid-air detour from the kitchen twice.
IMG_4724

What do these spices…
IMG_4734

And these ingredients have in common?
IMG_4834

Homemade Ethiopian food one night.
IMG_4744

When you walk to the grocery store early in the morning, you see a number of things… Like deer grazing in a neighbor’s yard…
IMG_4838

And weird objects in a “FREE” box.
IMG_4839

More goodies from another day in the garden.
IMG_4751

Those eggplants inspired an eggplant parmesan pizza.
IMG_4757

And the abundance of pesto is always a good excuse for this pesto mushroom pie.
IMG_4686

Sunnies.
IMG_4767

Side salads for three.
IMG_4837

Late summer Ashland evenings…
IMG_4816

My pole bean plants have been climbing straight into the sky and I’ve yet to harvest a single bean!
IMG_4840

A small abundance of apricots that were leaning towards being too ripe meant apricot + pecan scones this morning.

Hope you’ve had a good week!

Day to Day Life: Week Seven

The last week looked something like this:

IMG_7666Pancake stacks, earth balance, and “best friend of pancakes everywhere.”

IMG_7589Finally some rain around here… Rainy rainbow oil spots.

IMG_7668Fried fish tacos and veggie tacos.

IMG_7509In complete agreement about Mondays.

IMG_7583An easy dinner of Quorn brand Chik’n patties topped with fresh tomato, goat cheese and herbs, served on creamy grits with homemade marinara from our garden last summer.

IMG_7612The view from campus.

IMG_7629Quick tequila stop with the husband. Complimentary chips and salsa.

IMG_7669This is Jumpy Cat. He shows up at our doorstep about once a year for cuddles. This time he also got tuna.

IMG_7670More veggie tacos for another day.

IMG_7641The kids requested fry nachos, so that’s what they got for Valentine’s Day. Margaritas included for the non-children partaking in this meal.

IMG_7671The college was hosting an event that included laser tag, live bands, karaoke, and wii. These two shamelessly danced away to Daft Punk.

IMG_7656Peanut butter and jelly topped Belgian waffles.

IMG_7672I rearranged our bedroom one day while at home by myself. A comical site would probably be a 5’3″ lady moving a king sized bed plus a dresser that weighs more than she does. However, we’ve both been sleeping better, so… success! And the workout from my manual labor was decent as well.

photo (5)Lovely orchid plant from my husband for V-Day.

IMG_7667Torta panini is my favorite panini. Pinto beans, Mexican rice, jalapenos, cheese, guacamole, hot sauce.

photo (4)Silas got invited to participate in an all day 3 on 3 basketball tournament tomorrow. Basketball season is almost over, but he just signed up for little league, so that’ll start around April.

Day to Day Life: Week Five

Shall we have a look at the last week? Wanted or not, here it is!

IMG_7126

This bowl was my favorite a few times this week: maple yogurt, honey oat granola, toasted coconut flakes and a homemade blueberry spice sauce. I am grateful that a girl cannot OD on yogurt…

IMG_7125

While walking to the grocery store one morning, I passed this little truck. The driver made me laugh for the remainder of my walk, mostly because it caught me so off guard.

IMG_7106

Totally necessary when cooking dinner some nights. Here’s Lookin’ Atcha!

IMG_7112

That hairy eyeball was good company for homemade pad thai.

photo 5

Chocolate chunks and chips because there were certainly COOKIES this week.

IMG_7282

These dudes were singing at the top of their lungs driving down the road on our way for a lunch date.

IMG_7135

I love broccoli. Raw, plain, steamed, roasted, in soup…

IMG_7115

The best brunch ever, always. Two corn tortillas charred, then sammiched with cheese, topped with an egg, avocado, and tapatio.

IMG_7280

IMG_7283

My husband played a few new songs at a tribute this week for the owners of Alex’s restaurant here in town, which recently shut down.

IMG_7102

Necessary.

IMG_7182

Guess who… from the days of old wherein I actually looked part Asian!

IMG_7260

Little Miss.

IMG_7277

Homemade pizza in the making.

IMG_7278

And more pizza in the making…

IMG_7240

Homemade black bean burritos for dinner one night with roasted peppers and corn salsa.

IMG_7281

Do you know what is wrong with this photo? The jeans on the right belong to me. The ones on the left belong to 8 year old Silas. Perhaps I am shrinking at the ripe old age of 28?

IMG_7273

Broccoli cheddar beer soup. For you, tomorrow.

IMG_7287

I adapted Tracy Shutterbean‘s recipe for no-knead pizza dough and made these cheesy/garlic/herb bread stick rolls to go with our soup. Super easy: make the dough, roll into a rectangle, brush the top with olive oil or butter. Sprinkle on some dried herbs of your choosing – I used basil, thyme and oregano. Sprinkle on some sea salt and cayenne pepper, some parmesan cheese and red chili flakes. Roll up the rectangle, flatten it a bit, cut into strips that are about 1-inch wide. Place on a baking sheet, brush the tops with heavy cream/melted butter/oil/buttermilk (whatever of those you have handy). Sprinkle with more parmesan. Let the dough rise again for 25-30 minutes. Then bake at 425 degrees until golden brown (15-20 minutes). Great for soup-dipping. Or marinara sauce dunking. Or plain eating.

IMG_7279

Little dude pre-game breakfast. (Apparently I still cut up the pancakes.)

IMG_7328

Silas’ team had two games in a row on Saturday. One footed-one handed shot.

IMG_7270

We’ve been having a lot of sleepovers and kid-time recently. These dudes rearranged the living room for themselves then had a breakfast of cinnamon vanilla raisin french toast sticks and fresh fruit.
