Coconut Laced Jam Thumbprint Cookies

We are nearly halfway through January… is it okay to be talking about cookies? Too soon? (It’s never too soon for cookies!) Around Christmas, one day I decided baking giant heaps of various cookies was completely necessary (must have been that crazy-brain-thing that happens around the holidays). I made the go-to Christmas cookie: plain sugar cookies to be frosted and decorated with the kids, chocolate crinkle cookies, soft chewy ginger cookies, chocolate chip cookies with hazelnuts, chocolate and peanut butter chips… and the following thumbprint cookies.

Hands down, these were probably the favorite among both my husband and myself. They’re slightly delicate, but don’t lack flavor even in their light texture. The jam is important here, which you can buy from this Source; make sure to use something you like. That’s pretty open-ended, but intentionally so. You can even mix it up and use various jams (whoaaa!). These are great cookies for any time of the year and certainly don’t need to be saved for the holidays!

Coconut Laced Jam Thumbprint Cookies

Very lightly modified from Kayley at The Kitchen McCabe.

Yields two dozen cookies.

Ingredients:
1 3/4 sticks unsalted butter, softened (14 tablespoons)
1/2 cup powdered sugar
1 1/2 cups all-purpose flour
1/2 cup cornstarch
1 teaspoon almond extract
1/2 teaspoon vanilla extract
1/2 cup unsweetened coconut flakes
3-4 tablespoons of jam (I used a homemade lavender grape jelly)
2-3 ounces white chocolate

Directions:

Preheat your oven to 300 degrees F. Line 2 baking sheets with parchment paper.

In a stand mixer, use the paddle attachment to cream the butter and powdered sugar together until light and fluffy (about 2 minutes at medium speed).

Whisk together the flour and cornstarch in another bowl. Add the flour mixture to the butter and slowly mix until combined. Add the almond and vanilla extracts, then mix until just combined. Divide the dough into 24 pieces. Roll each piece into a ball, then roll the dough in the coconut flakes.

Place each coconut rolled dough ball about 1 1/2 inches apart on the prepared baking sheets. Flatten each dough ball slightly, pressing the center of each ball down with your thumb to make a small well. Spoon about a half teaspoon of jam in each indentation.

Bake in your preheated oven for about 15 minutes, or until the coconut is just slightly toasted. Remove the pans from the oven, but let the cookies sit on the baking sheet for 5 minutes. Place on a wire rack to finish cooling.

While the cookies are cooling, melt the white chocolate in a double broiler. Drizzle the melted chocolate over the tops of the cookies (a piping bag with an attached fine tip works well for this). If you refrigerate the cookies for 15-20 minutes, the chocolate should fully set, although the cookies won’t need to be refrigerated after the chocolate has set.

Eggnog Waffles with Brown Sugar Butter Apples

We recently went out for breakfast. While looking at the menu, trying to decide what to make, it occurred to me that I rarely get adventurous about breakfast food because typically I don’t eat breakfast. However, on the rare occasion that breakfast-hunger-pains strike, I usually want something carby and sweet (a.k.a. WAFFLES or FRENCH TOAST) or something completely opposite, that is extremely savory. Its been months since I made waffles of any sort, because around here the most popular request is pancakes.

When the urge for waffles recently occurred, as luck would have it, I realized we were completely out of milk. Luckily, we had a near-full half gallon of eggnog, as a certain 9-year-old requests it every holiday season. Eggnog waffles? This didn’t seem too wacky, seeing as eggnog is just milk… eggs, sugar, cream, perhaps some nutmeg. These waffles were crisp, smelled like doughnuts while cooking and certainly didn’t disappoint for flavor. Served with these brown sugar apples, the waffles are almost like eating dessert for breakfast!

Eggnog Waffles with Brown Sugar Butter Apples

Makes about 6-8 waffles.

Ingredients:

For the waffles:
2 eggs, separated
3 1/2 cups all-purpose flour
2 tablespoons turbinado sugar
1 tablespoon baking powder
1 teaspoon sea salt
1/2 teaspoon freshly grated nutmeg
1/4 teaspoon ground cinnamon
2 cups eggnog
1/4 cup coconut oil, melted
1 teaspoon vanilla extract

For the apples:
1/4 cup butter
4 large tart apples – peeled (if you want), cored, sliced 1/4 inch thick
2 teaspoons cornstarch
1/2 cup cold water
1/2 cup brown sugar
1/2 teaspoon ground cinnamon

Directions:
Preheat the oven to 200 degrees F. Place a rimmed baking sheet in the oven and let it preheat as well. Preheat your waffle iron as per its directions.

Use a mixer to beat the egg whites to stiff peaks. Set aside.

In a small bowl, combine the flour, sugar, baking powder, salt, nutmeg and cinnamon. In a large bowl, lightly beat the egg yolks, and then pour in the eggnog. Slowly fold the flour mixture into the eggnog mixture. Stir just until the batter is smooth. Scrape down the sides and add the melted coconut oil and vanilla extract. Lastly, fold in the egg whites, until just-combined. Set the batter aside until needed.

Begin preparing the apples. In a large skillet or saucepan, melt butter over medium heat. Add apples, then cook, stirring constantly, until apples are almost tender, about 6 to 7 minutes. Dissolve the cornstarch in the water, then pour into the skillet. Stir in the brown sugar and cinnamon. Cook for an additional 2-4 minutes, stirring occasionally. Reduce heat to low and keep warm.

Cook the waffles according to your waffle maker’s instructions. Place the cooked waffles in the preheated oven, or you can eat them immediately for best results.
Top waffles with the cooked apples and additional maple syrup if desired.

A January Adventure

I tend to have a lot going on, all the time. Were I to give you a rundown of the long list of miscellaneous things that accumulate and devour all the hours in my days, everyday, any sane person would probably deem me completely looney-tunes.

The above quote is one I remind myself of often. It’s easy to get lost in the chaos of being someone who willingly takes care of the needs of others before her own. Time to myself is NEEDED for my sanity. As a full-fledged introvert (and half-crazy person), when I don’t have that space, it’s easy to feel completely disconnected from everything around me–including things and people I both love and care deeply about. Forcing myself to make the time to get outside, to do something active is often an easy way to reevaluate my senses, feelings, and generally offers a reset button, leaving me feeling connected again.

That said, today included an outdoor adventure that ended up being precisely what I needed. Here are a few snapshots from the day:

Meatless Monday: Rajas de Poblano con Elote y Crema Tacos

For a good, long period of my near-thirty years, burritos were my preferred Mexi-food fare. Over the last few years, however, I’ve found myself increasingly enamored with tacos. Possibly because nearly anything can be shoved into a taco. Possibly because I can keep eating them, whereas I am generally full after one burrito. ;)

Since I don’t cook meat at home, we have veggie-taco nights, perhaps once a week or so. However, vegetarian tacos can become boring really fast. Beans, rice, cheese, salsas and sauces of various sorts, avocado… No one here is particularly fond of what is often the other vegetarian taco offering that is heavily present on a multitude of restaurant menus — heavy on the roasted vegetables, little on anything else, beans and rice on the side… Sometimes we are lucky to find bean/rice/cheese type tacos, which are incredible despite (or perhaps because of) their simplicity.

I began to do some research for the best veggie tacos across the globe. One taco that immediately caught my attention was filled with a creamy, roasted poblano pepper filling, wherein the tacos had nothing but this in/on them. Poblano peppers are medium-spiced (although occasionally you’ll find a spicy one!), but carry a lot of flavor. Roasting them imparts a smokiness that carries through in the following dish. This gorgeous taco filling is a great balance of spiciness, sweetness, creaminess, and downright deliciousness!

Rajas de Poblano con Elote y Crema
Tacos with Slices of Roasted Poblano Peppers with Corn and Cream

Serves 4-6 people.

Ingredients:
3 tablespoons olive oil
2 cloves garlic, minced
1 white onion, peeled, halved then cut into 1/4-inch thick slices
6 poblano peppers, roasted, seeded, then cut into 1/4-inch thick slices
2 cups sweet corn (frozen is okay)
1 teaspoon ground cumin
1/2 teaspoon dried Mexican oregano
1/2 teaspoon salt
1 cup cotija or mild feta cheese, crumbled
1 1/2 cups sour cream
1/2 cup fresh cilantro, chopped

Directions:
In a large skillet heat the oil over medium high heat. Add the garlic and cook until fragrant (1-2 minutes).

Reduce the heat to medium and add the onion, cooking until softened, 2 to 3 minutes. Add the roasted chile strips and corn, cumin, oregano and salt, then cook an additional 3 to 4 minutes.

Add the cheese, reduce the heat to low and stir in the cream. Continue cooking, stirring until the cheese has melted. Remove from heat, stir in the chopped cilantro, then serve immediately with warm tortillas.

Homemade Rice-A-Roni

Did you grow up with boxes of Rice-A-Roni laying in your kitchen pantry? Perhaps you merely recall the commercial, whose jingle boasted, “Rice-A-Roni, The San Francisco treat! Rice-A-Roni, its flavor can’t be beat. One pan, no boiling, cooking ease! A flavor that is sure to please. Rice-A-Roni, the San Francisco treat! Ding! Ding!”

It’s one of the first things I learned to cook (albeit the instructions are pretty damn straightforward and uncomplicated). The ingredients of rice and weird little stick-like-looking pastas that I’d pour out of the box always left me curious about what exactly these ingredients were… I eventually figured out that the weird little stick-like-looking pasta was simply broken up vermicelli. So… exactly what they looked like — pieces of broken pasta. 

However, every box also contains ingredient lists wherein half of the ingredients are things I can’t pronounce and things I would prefer not eating. Sometimes an easy side dish is needed – that’s how I found myself researching homemade rice-a-roni. This dish is both flavorful and easy to put together, without additional ingredients that are better left uneaten.

Homemade Rice-A-Roni

Serves 6

Ingredients:
3/4 cup long grain white rice
1/2 cup small pasta shape (like angel hair noodles broken into pieces 1/2-inch long)
3 tablespoons butter
1 tablespoon oil
1 teaspoon dried parsley flakes
1/2 teaspoon dried thyme
1/2 teaspoon granulated garlic
1/2 teaspoon salt
1/2 teaspoon ground black pepper
14 oz No-Chicken broth

Directions:
Melt the butter and oil in a large pan over medium-high heat. Add the rice and pasta, sautéing until lightly browned.

Add the parsley, thyme, garlic, salt and pepper. Stir to coat everything evenly. Add in the broth, stirring well.

Bring to a boil and then cover, reducing the heat to low. Cook for 20 minutes without lifting lid.

After 20 minutes, check to see if all liquid has been absorbed. Fluff the rice with a fork. Cover and let sit 5 minutes before serving.
