The first time I saw queso fundido on a menu, I thought it was nearly too good to be true. A dish filled with melty cheese whose only purpose is to be eaten? It’s the stuff dreams are made of. It’s also one of my weaknesses and I can’t/won’t apologize!

The first time I made queso fundido, I loaded it up with freshly roasted poblano peppers and we demolished the entire thing in one sitting with a bunch of tortilla chips. The poblanos had a subtle smokiness without being overly spicy.

This queso is layered with nicely spicy vegetarian chorizo. There are numerous brands of soy chorizo, but my preference is actually Trader Joe’s brand. You can eat the queso with warm corn tortillas or use tortilla chips to enjoy it as a warm, cheesy dip. (Really if you’re feeling more keen on eating it by the spoonful, I wouldn’t thwart your endeavors.)

Meatless Monday: Queso Fundido Con Soyrizo

Serves 6-8 people.

Ingredients:
1 tablespoon olive oil
1/2 a large onion, diced
12 ounces Soyrizo
1 7-ounce can diced green chiles
8 ounces monterey jack cheese, shredded
16 ounces mozzarella cheese, shredded
1/2 cup fresh cilantro, chopped
2 large roma tomatoes, diced

Directions:

Preheat your oven to 350 degrees F. Heat the oil in a 10-inch cast iron pan over medium-high heat. Add the diced onion and sauté just until the onion soften and becomes fragrant. Crumble in the soyrizo and cook, occasionally stirring, until the soyrizo browns (8-10 minutes). Add in the green chiles and sauté for an additional minute or so.

Scoop out half of the soyrizo mixture and place in a small bowl until needed. Sprinkle on half of the cheese over the remaining soyrizo that’s in the pan. Layer on the soyrizo that you removed, over this layer of cheese, followed by the remaining shredded cheese.

Bake for 15-20 minutes, until bubbly and golden brown on top. Sprinkle on the diced tomato and cilantro, then serve immediately, with warm tortillas or chips.

We had dinner without the kids at Lark’s, here in town. We opted for drinks and a number of shareable appetizers. I drank an Oregon Mule (cinnamon apple vodka, lime and ginger beer) while my husband had a fresh plum margarita. Apparently I am a gen-u-wine crazy bird lady. I was sitting on our porch on my birthday enjoying a cup of coffee when this little half-gray scrub jay came flying up and landed 6 inches from my feet. It just looked at me. I went in the house and got some crumbs of bread… the scrub jay happily ate every piece I’d throw, and then began hiding each new piece in different places around the yard. Once all the bread was hidden, the jay went back to each spot and ate the crumbs one at a time! This little bird has been back everyday since, multiple times each day… This afternoon it even ate out of my hand! (And gently nibbled my finger tips and gave my hand a little bird lick!) We’ve always chased off the scrub jays because they tend to mess with our resident pigeons… but this one’s pretty sweet so far. (I told Craig I was going to be able to hold her — I’m guessing it’s female because of the coloring –by the end of the week!) (I also call her/it Blue Chicken.) Hehehehe!

I turned 30. I turned 30. Oh hey, I turned 30 this week.

I also got carded at the grocery store when I tried to buy a six pack of beer the other day. Did I freak out about the monumental birthday (or the need to pull out my ID)? Nah. If there’s one thing that I am extremely exceptional at, it’s the ability to not freak out. (Unless that is the appropriate response… which generally it isn’t.)

The truth is, I don’t feel any older. Sure, there are subtle differences. I catch myself noticing the next day if I drank too much bourbon. I find myself realizing that I am the age my mom was when she was pregnant with my older sister. My 20’s were fun. I went to, and finished, college. I did a good amount of traveling (which I also hope continues to increase as my age does). I got married. I have two step-kids (one of whom will be finishing his last year of elementary school this fall, and the other finishing his last year of high school!). I’ve rediscovered the art of relishing in and loving small pleasures in life. I feel like as the years continue to increase, things really do just get better.

For instance, in my late teens and early twenties, I would probably have felt guilty for how frequently I ate pizza. Now that I have hit 30, I feel like I can eat all the pizza I want, within reason. (And within consideration of my future-workout, hah!) When we were in the hospital with Silas a few weeks ago, I made the mistake of binge-watching Food Network when everyone else was asleep. One episode was on the supposed best pizzas ever. (I don’t suggest watching shows like this in the wee hours of the morning after you’ve been dining on hospital food…) One pizza that immediately stuck out was an oyster mushroom and smoked mozzarella pie from a pizza joint in Minneapolis. I knew I had to make my own version. So I did… and here it is:

Sourdough Pizza with Oyster Mushrooms, Garlic, Smoked Mozzarella and Rosemary

Makes one large pizza.

Ingredients:

For the pizza dough:
1/4 cup warm water (110-115 degrees F)
1 tablespoon sugar
1 1/2 teaspoons yeast
1 cup sourdough starter
1/2 teaspoon sea salt
2 cups all-purpose flour (plus 1/4-1/2 cup more)
2 tablespoons vital wheat gluten

For the pizza toppings:
1 cup sliced fresh oyster mushrooms
6 cloves garlic, minced
2 tablespoons fresh rosemary, minced
2 cups smoked mozzarella, shredded
1/4 cup crumbled feta cheese
1/4 cup prepared pesto sauce

Directions:

Prepare the dough:  in the bowl of your stand mixer, combine the warm water, sugar, and yeast. Stir to submerge the yeast. Allow the mixture to sit and proof for 3-5 minutes, until frothy. Add in the sourdough starter, salt, and half of the flour. Use the dough hook to mix the ingredients until they just come together (2-ish minutes). Turn the mixer off and allow the mixture to rest for 15 minutes.

Once rested, add the remaining flour and vital wheat gluten to the mixture. Use the dough hook to work the dough into a semi-sticky ball. Continue kneading for about 6-8 minutes. By touch, the dough will probably seem really sticky. But lightly dust some flour on it and voila! the stickiness goes away. Lightly coat the bowl with olive oil, turning the dough in it once, to coat. Cover the bowl and allow the dough to rise until doubled (about 1 – 1½ hours).

Prepare the pizza:  preheat your oven and a large pizza stone at 550 degrees F (if your oven only goes up to 500, that’s okay) for at least 20 minutes.

Turn the dough out to a lightly floured surface. Use a rolling pin to roll the dough to about 1/2-inch thick. Place the dough on your preheated pizza stone, working quickly. Start at the center of the dough, working outwards, using your fingertips to press the dough to about a 1/4-inch thick, gently stretching the dough until it reaches the diameter you want (I got a 16-inch pizza). You can create a lip, or raised crust, if you want (I prefer not). Prick with a fork about 8 times all over the dough then bake for about 5 minutes, until cooked, but not long enough to brown the crust.

Spread the prepared pesto on the crust, leaving about a half-inch around the outside. Arrange the mushrooms evenly over the pizza, then sprinkle on the garlic, rosemary, mozzarella, and feta cheese.

Bake for 12-15 minutes, until the top of the pizza is bubbly and golden brown. Let the pizza rest for 3-4 minutes before cutting into slices. Eat while warm!

White Chocolate Mousse

Mousse can easily seem intimidating. There’s often the precision of whipping up egg whites into meringue, the whipping of cream, and the delicate folding together of these ingredients, ensuring a light, airy dessert. You can go haphazard. There may be denseness, overly thick pudding-like mousse.

You’d think that a recipe with so few ingredients would be less likely to come across as daunting… However, intimidating or not, I’m hard-headed. And my cooking philosophy still applies daily: don’t be afraid of making mistakes.

When I decided to make the following white chocolate mousse, it was mainly for my mother-in-law, whose favorite “chocolate” is white “chocolate.” I found a recipe that seemed approachable and dove in. This mousse doesn’t include a meringue, but the whipped cream still creates a light dessert. This mousse is incredibly rich and decadent. It’s not overly difficult and easily comes across as impressive. A win-win situation, especially when adding in the fact that it tastes good!

White Chocolate Mousse

White Chocolate Mousse

Serves 8 or so.

Ingredients:

4 egg yolks
1/4 cup granulated sugar
2 1/2 cups heavy whipping cream
1 cup white chocolate chips

Optional:
1 cup heavy whipping cream
1/4 cup granulated sugar
1 teaspoon vanilla
fresh raspberries
fresh mint leaves

Directions:

Beat the egg yolks in a small bowl, using an electric mixer on high speed, until they’re thick lightly yellow in color. Gradually beat in the sugar.

Heat 1 cup of whipping cream in a saucepan over medium heat, just until hot. Temper the eggs by gradually stirring at least half of the cream into egg yolk mixture, then stir this mixture back into hot cream that remains in the saucepan. Cook over low heat about 5 minutes, stirring constantly, until mixture thickens (do not allow it to boil). Stir in the white chocolate until completely melted. Cover and refrigerate about 2 hours, stirring occasionally, just until chilled.

Beat the remaining 1 1/2 cups of whipping cream on high speed until stiff peaks can form. Fold the completely cooled, refrigerated white chocolate mixture into the whipped cream, being sure not to . Spoon mixture into parfait (of your preferred) glasses.

If you want, beat together 1 cup heavy whipping cream, 1/4 cup sugar, and 1 teaspoon vanilla until stiff peaks form. Garnish the top of each mousse cup with a dollop of the fresh vanilla whipped cream, a raspberry and mint leaf. Store covered in the refrigerator until ready to be eaten.

Day to Day Life: Week Twenty-One

Early in the week, we were still in the hospital with Silas. There was a koi pond we visited frequently once Si was allowed to wander around outside, as we was essentially pain-free by the end of last week.

The day before (Monday) Silas got released, we asked if he could leave the hospital in-between his IV medications to grab some dinner (and to get his restless self out of the hospital). We had 3 hours of freedom and the little dude requested enchiladas and time at the mall (haha).

Day to Day Life: Week Twenty

We have had quite the week as you’re about to get a peek at. If you remember last week, we had an emergency visit to the ER with Silas. Well, on Monday we received a phone call saying his blood had tested positive for bacteria, so we should return to the hospital. That afternoon, more blood was drawn but the doctor concluded that it was likely Silas simply had a viral infection that would go away on its own. On Tuesday we received another phone call from a different doctor saying Silas’s blood tested positive for bacteria again and we needed to take him to a larger hospital in the next town over. We have been in the hospital since (still here as I type this). He’s been an incredible trooper through this whole ordeal, withstanding blood tests, excruciating pain, narcotics to alleviate said pain, an MRI, x-rays, ultrasounds, multiple IV insertions… At least we have an official diagnosis of a deep bone infection in his leg. He is on the mend and we are hopefully going home on Tuesday! That said, here’s that glimpse:
